    Directions

    1. Whisk the ingredients together until smooth and pourable (thin like heavy cream). Let rest 10–20 minutes if you have time—this improves texture.

    2. Heat your No. 8 cast iron griddle over medium-low heat. Lightly butter and wipe excess with a paper towel.

    3. Pour about ¼ cup batter into the center and immediately swirl the pan to spread thin.

    4. Cook 45–60 seconds until edges lift and the bottom is lightly golden. Flip and cook 15–30 seconds more.

    5. Repeat until the process is done. Stack finished crepes on a plate. Re-butter lightly as needed.
